Each Ultra Beast has its own rationale for the different colors
Nihilego: The purple refers to the toxins that it uses to parasitically control its prey.
Buzzwole: The green is not only a complement to its Bug type and insect features but also its green greed with the ability to absorb the energy of others.
Pheromosa: While the change is light, red and pink are often seen as colors of love and lust, and Pheromosa has those bases covered.
Xurkitree: This coloration plays more on the tree part of the name
Kartana: The bluish blades were a bit of a random choice but a nice one nonetheless.
Celesteela: The deep blue is both a reference to a supercomputer named Deep Blue (as it somewhat resembles a supercomputer) but also the beautiful color of the sky.
Guzzlord: The black and purple color scheme as seen as an evil color scheme, as well as the colors used for entities similar to shadow balls and black holes in many media.

Guzzlord could have used a touch of Xurkitree's green to complete the evil colour scheme (its green and purple afaik), and Xurkitree still looks pretty electrical cords to me... Maybe its white spike thingies need to be green too? And more of a leaf colour.
